Asparagus salad

- 25 g lamb's lettuce
- 0.25 bunch of green asparagus
- 0.25 Pck. tempeh teriyaki
- 0.25 Handful of blueberries
- 0.25 Tbsp orange juice
- 0.75 Tbsp olive oil
- 0.25 Tbsp light balsamic vinegar
- 0.25 tsp mustard
- 0.25 teaspoon maple syrup or sugar
- 0.25 Garlic clove (optional)
- Salt, pepper
Description
Colorful and healthy! Enjoy this delicious lamb's lettuce with roasted asparagus, tempeh, blueberries and a fruity orange dressing.
Preparation
Peel the ends of the green asparagus and cut off the woody ends if necessary. Cut the asparagus spears into bite-sized pieces and fry in frying oil over a medium heat for a few minutes. Add a little water, season with salt and pepper and simmer until the asparagus is tender and soft.
Dice the tempeh teriyaki and fry in oil until golden brown.
To make the dressing, squeeze the orange and mix some of the juice with the olive oil, mustard, maple syrup, balsamic vinegar and spices.
Clean the lamb's lettuce and arrange on a flat plate. Arrange the tempeh cubes, asparagus and blueberries on the salad, pour over the dressing and eat immediately.
