We only use carefully selected organic raw materials for tempeh production. Regionality and the highest organic quality are very important to us. The soybeans for our tempeh come from farms in Germany and Austria. We source most of the sweet lupins from farmers in Germany, for example from Thuringia. A small quantity comes from a farmer friend in the Czech Republic. We also buy the black beans as regionally as possible. That is why we are in close contact with farmers from the region who are conducting cultivation trials with black beans. We are very proud that we are already able to source some of the goods we need from regional farmers. |
Tempeh is the all-rounder in the kitchen! Tempeh can be diced or sliced, finely grated or chopped. Fried in a pan with a little oil until crispy brown, tempeh can be used for a wide variety of dishes. For example, as a salad or soup topping, as a bread topping, in sauces, casseroles, bowls, wraps and much more. You can find lots of inspiration at our recipes. |
In principle, tempeh can also be eaten raw or unheated. Our tempeh is gently pasteurized after ripening with the noble mould, which means that the product is no longer completely "raw" anyway. We recommend frying the tempeh because we believe that this is the best way to bring out the flavor. |
Heating tempeh has no negative effects on the ingredients. Compared to other fermentation products, the ripening cultures of tempeh have no particular effects on the body or the intestines. What is so valuable about tempeh ripening is the conversion of nutrients into easily digestible components (e.g. readily available protein). The tempeh fungus also produces additional nutrients such as B-group vitamins. The tempeh maturing culture also breaks down certain substances in the bean (e.g. phytic acid, tannins), which can limit the absorption of minerals or digestibility, among other things. This further increases the availability of certain nutrients and digestibility. |
Tempeh can be frozen very well. You can keep tempeh frozen for up to 6 months. The taste and consistency will not change. |
Dark spots on the tempeh surface are always the natural, harmless spores of the fungus. Tempeh with dark spots can be eaten as usual. Like all mushrooms, the tempeh mushroom starts to form spores under certain conditions in order to reproduce. These spores, like the mushroom cap, are completely harmless, edible and completely normal. The onset of spore formation even means that the tempeh is very well matured. We naturally aim to produce tempeh without spores because it simply looks "nicer". However, as spore formation is a completely natural process that can occur when the tempeh is well ripe, it cannot always be avoided and does not represent a quality defect. If you are still unsure, please send us a photo of your tempeh to info@tempehmanufaktur.net and we will get back to you as soon as possible. |
Light spots on the tempeh are caused by the fungal network of the noble mold in every type of tempeh. It is particularly noticeable in tempeh made from black beans. Clearly visible light spots are a sign of the quality of very mature tempeh. |
The protection of our products is very important to us, because our tempeh should end up fresh and tasty on your plate. We have spent a long time considering which packaging solution is best for us. Plastic film is currently the most sustainable packaging option in terms of production, product protection and packaging weight. The film is not printed or covered with stickers to make it easier to recycle the material. The cardboard box is made from 100 % recycled paper and is fully recyclable and biodegradable. |
