Description

This Greek pan-fried dish is hearty, Mediterranean and a little reminiscent of a vacation in the sun.

Preparation

Finely dice the onion and garlic cloves and place in a pan with a little oil.

Finely grate the tempeh with a kitchen grater, deseed and dice the peppers and fry in the pan.

Stir in the ajvar and tomato purée and add the tomatoes. Pour in a little water and simmer until the diced peppers are soft.

Season the paprika pan with salt, pepper, oregano and a little cumin, adding a little sugar if necessary.

Optionally, the Greek dish can be topped with feta. Crumble the feta over the top and allow to warm briefly without stirring again.

The Greek bell pepper pan tastes delicious with flatbread, kritharaki or rice.
