Protein-rich chickpea salad

- 0.25 Zucchini
- 0.25 Yellow peppers
- 0.25 Pck. lupin tempeh wild herbs
- 25 g Edamame
- 37.5 g chickpeas
- 0.25 Tbsp olive oil
- 0.5 tablespoon lime juice
- Some chives and parsley
- Salt, pepper
Description
Full protein power from tempeh, chickpeas and edamame, the perfect fitness salad!
Preparation
Wash and dice the peppers and zucchinis. Dice the tempeh too and finely chop the garlic. Fry everything together in a pan with a little oil.
Pour the roasted vegetables into a salad bowl and add the edamame and chickpeas.
Chop the herbs and add to the salad.
Mix the olive oil, lime juice, salt and pepper into a dressing and pour over the salad.
Mix well and enjoy while still lukewarm!
