    For the pasta salad
  • 75 g pasta (e.g. fussili)
  • 40 g cocktail tomatoes
  • 0.25 small tin of corn
  • 0.25 Pack of lupin tempeh wild herbs
  • 2 Black olives
  • 0.25 Red onion
  • Fresh herbs: basil, chives, oregano, rocket

  • For the dressing
  • 0.5 Tbsp light balsamic vinegar
  • 1 Tbsp olive oil
  • 0.25 tsp mustard
  • 0.25 tbsp agave syrup
  • 0.25 Garlic clove or garlic powder
  • 0.25 teaspoon Italian herb mix
  • Salt and pepper

Description

The Mediterranean pasta salad is great to prepare in advance and perfect for meal prep!

Preparation

Cook the pasta in plenty of salted water and rinse briefly in cold water.

Finely chop the onion, dice the tempeh and fry together in a pan with a little olive oil.

Halve the tomatoes, cut the olives into rings and chop the herbs.

Put the ingredients for the dressing in a jar and shake well.

Mix everything together and season with salt and pepper.

The pasta salad tastes best if it is left to marinate for 1-2 hours or overnight.
