Pesto pasta - quick pasta dish

  • 83.333 g pasta, e.g. penne
  • 0.333 small zucchini
  • 0.333 red peppers
  • 0.333 Handful of cocktail tomatoes
  • 0.333 Onion
  • 0.333 Packs of tempeh BBQ (or other variety)
  • 0.1667 Jar of basil pesto

Description

This pasta pan is quick and easy to make and a delight both hot and cold!

Preparation

Place the pasta in boiling, salted water and cook until done (be careful to keep the pasta water!)

Chop the onion, dice the vegetables and tempeh and fry everything together with a little oil in a large pan.

Add the cooked pasta and spread a few spoonfuls of pesto on top (homemade pesto made from fresh basil tastes best, of course). Add 2 ladles of pasta water, halve the cocktail tomatoes and add to the pan.

Mix everything well and enjoy the pesto pasta!
It tastes just as good warm as it does as a cold pasta salad and is also an excellent side dish for barbecues.
