Protein-rich salad with lupin tempeh

Number of portions
  • 1 Pack of lupin tempeh wild herbs
  • 0.5 Head of lettuce
  • 0.5 Handful of cocktail tomatoes
  • 0.5 Spring onion
  • Sunflower seeds

  • Dressing
  • 0.5 Shallot
  • 1.5 Tbsp white balsamic vinegar
  • 2.5 Tbsp olive oil
  • 0.5 tsp mustard
  • 0.5 teaspoon agave syrup or sugar
  • A little salt and pepper

Description

Tempeh as a topping is really filling and transforms the salad into a full meal.

Preparation

  1. Clean and roughly chop the lettuce. Wash and halve the tomatoes and finely slice the spring onion.
  2. Briefly fry the sunflower seeds in a pan without oil. Remove the seeds from the pan and fry the diced tempeh with oil until golden brown.
  3. To make the dressing, finely dice the shallot, mix well with the remaining ingredients and toss with the salad.
  4. Top with tomatoes, seeds, tempeh and spring onions and enjoy!
